Meal Planning: Week of November 8th, 2015

Here’s my meal planner for this week:

Sunday- Autumn Salad (herbed goat cheese, walnuts, apples, craisins, spinach, raspberry vinaigrette)

Monday- Chicken Caesar Wraps & Rosemary Fries

Tuesday- Mom’s Chicken, Salad, Bread and Roasted Cauliflower

Wednesday- Pasta with a creamy tomato sauce, Garlic Bread, Salad, and Meatballs

Thursday- Leftovers from Wednesday

Friday- Buffalo Chicken Pizza, Celery & Carrots

Saturday- Leftovers from Friday

Lunches- Chicken Nuggets & Fries, Cottage Cheese with veggies & crackers, PBJ sandwiches

  1. Thanks for posting this! Tommy and I love seeing these as an idea of what to cook. We still haven’t gotten back in the swing of cooking after the trip and cold, so this was a good inspiration!

    Tommy was curious about the buffalo chicken pizza. Is that a made item or take out? We may make a homemade version next time we have pizza =)

    • Homemade! I make crust from a box, then use a thin layer of blue cheese dressing as the sauce, I then add buffalo chicken (baked chicken in frank’s red hot & butter) and top with mozzarella cheese. I serve it with extra blue cheese dressing plus carrots and celery. You can also sometimes find canned buffalo chicken, which makes the chicken part easier.

      • Thank you! Tommy is so excited to try making this! I never would’ve thought to do the blue cheese dressing for sauce. What’s your preferred blue cheese dressing brand? I can’t remember, but Tommy thinks he remembers seeing Wishbone in your fridge 😉

      • You’re welcome! My number one choice is Kraft’s Roka Blue, but if there’s a good sale on Wishbone, I’ll do that instead.

      • We made this for dinner yesterday and it was AMAZING! We had leftover chicken that we mixed with lettuce and onion as a side salad to go with this. Super delicious! We also made the pizza stuffed crust. Had the leftovers tonight and they were still fab. Thanks for sharing!
